Thomas Reyes has spent the past year overseeing a significant capacity expansion at a Mankato food processing facility, where he serves as general manager, as the company works to keep up with growing demand for its grain-based products sold to regional and national grocery distributors. The expansion includes new processing equipment and additional warehouse space to accommodate increased production volume.
Reyes says the expansion decision followed several years of steady sales growth that had begun to strain the facility's existing capacity, occasionally forcing the company to delay orders or turn away new distribution opportunities simply because production could not keep pace with demand. The investment represents a significant commitment for a regional food processor operating with tighter margins than larger national competitors.
Scaling Production While Maintaining Quality
A central challenge in the expansion process, Reyes says, has been ensuring that increased production capacity does not come at the expense of product quality standards that have been central to the company's reputation with regional distributors. New equipment has been tested extensively alongside existing processing lines before being fully integrated into regular production, rather than switching over all at once.
The expansion has also required additional hiring, both for production line positions and more specialized quality control and equipment maintenance roles. Reyes says finding qualified workers for some of the more technical positions has proven more challenging than filling general production roles, reflecting broader workforce trends affecting manufacturing employers across Greater Minnesota.
Local economic development officials have highlighted the expansion as a positive sign for Mankato's manufacturing sector, noting that food processing has remained a relatively stable source of regional employment even as some other manufacturing subsectors have faced more volatility in recent years.
Positioning for Continued Regional Growth
Reyes says the company's growth strategy remains focused on strengthening its position within regional and Midwest distribution networks rather than pursuing more aggressive national expansion that could require significant additional capital investment and operational complexity beyond the company's current scale.
He points to the facility's location in Mankato, with reasonable proximity to grain sourcing and regional transportation infrastructure, as a continued competitive advantage that supports the company's current growth strategy. Looking ahead, Reyes says he expects the newly expanded capacity to support continued sales growth over the next several years, while acknowledging that further expansion beyond the current project would likely require additional facility investment down the road if demand continues to grow at its recent pace.
